F\u00f6r m\u00e5nga runt om i v\u00e4rlden handlar det om\u00a0\u00f6verlevnad\u00a0men vi som aldrig k\u00e4nt riktig hunger beh\u00f6ver ocks\u00e5 hj\u00e4lpa till. Vi m\u00e5ste sluta sl\u00f6sa med resurser och respektera all mat som produceras p\u00e5 v\u00e5r vackra jord.<br \/>\n<\/strong><\/p>\n<p>Trots att det pratas r\u00e4tt mycket om matsvinn nuf\u00f6rtiden sl\u00e4nger vi fortfarande alldeles f\u00f6r mycket i rika l\u00e4nder. Alltmedan i oroar oss f\u00f6r hur vi ska kunna producera livsmedel i framtiden n\u00e4r jorden torkat ut eller \u00f6versv\u00e4mmats. Jag tror best\u00e4mt att jag ska anv\u00e4nda min plattform h\u00e4r till att skriva lite mer om just matsvinn och vad man kan g\u00f6ra f\u00f6r att minska det. M\u00e5nga klimatfr\u00e5gor \u00e4r stora och sv\u00e5ra men allt beh\u00f6ver inte vara s\u00e5 himla kr\u00e5ngligt j\u00e4mt.<br \/>\nEnligt min erfarenhet m\u00e5ste de flesta f\u00f6r\u00e4ndringar antingen vara kniven mot strupen-n\u00f6dv\u00e4ndiga eller lustfyllda f\u00f6r att de ska bli av. Sj\u00e4lvklart kommer vi att sluta sl\u00e4nga mat om vi riskerar brist och hunger men tills dess kanske det m\u00e5ste vara kul och enkelt? Sj\u00e4lv tycker jag att det \u00e4r v\u00e4ldigt roligt och inspirerande att ta tillvara och det \u00e4r tillfredsst\u00e4llande att veta att man kan g\u00f6ra n\u00e5got f\u00f6r klimatet varje dag bara genom att v\u00e4lja r\u00e4tt mat, k\u00f6pa lagom mycket och att anv\u00e4nda den smart.<\/p>\n<p><strong>En sak som vi g\u00f6r \u00e4r detta.<\/strong><br \/>\nVi har f\u00f6r tredje \u00e5ret, eller om det \u00e4r l\u00e4ngre, prenumererat p\u00e5 gr\u00f6nsakskassar fr\u00e5n G\u00e5rdtj\u00e4rns G\u00e5rd. De har ljuvliga gr\u00f6nsaker och man vill verkligen ta vara p\u00e5 exakt allt. En del av inneh\u00e5llet \u00e4r gamla bekanta som potatis och mor\u00f6tter, men vi har ocks\u00e5 f\u00e5tt testa s\u00e5dant som jag aldrig k\u00f6pt tidigare. Gr\u00f6nk\u00e5l, mangold och majrova till exempel, alla dessa var nya f\u00f6r mig n\u00e4r vi b\u00f6rjade och jag har fortfarande inte satt mig in i allt gott man kan laga av dem. Det hindrar mig dock inte fr\u00e5n att ta tillvara dem. Perfekt att ha i frysen och ta fram som tillbeh\u00f6r till n\u00e5gon kycklingr\u00e4tt eller n\u00e4r man vill sl\u00e4nga ihop en god padthai en tr\u00e5kig tisdag. Broccoli, l\u00f6k, blomk\u00e5l och k\u00e5lrot \u00e5ker ner och blandas med strimlor av rovor och vitk\u00e5l. Gr\u00f6nk\u00e5len \u00e4r ocks\u00e5 god i woken och mangolden h\u00e4nger med av bara farten.<\/p>\n<p><strong>Det som \u00e4nd\u00e5 blir \u00f6ver, som exempelvis lite h\u00e5rdare stambitar eller h\u00e4ngiga k\u00e5lblad och brukar jag l\u00e4gga i en gryta med vatten, ett par buljongt\u00e4rningar och n\u00e5gra potatisar. Bladen fr\u00e5n blomk\u00e5len och mittnerven p\u00e5 gr\u00f6nk\u00e5len f\u00e5r ocks\u00e5 koka med. Man kan \u00e4ven passa p\u00e5 att l\u00e4gga i annat som beh\u00f6ver tillagas. En halv l\u00f6k som ligger ensam i kylen, en bit paprika eller n\u00e5gra tomater som b\u00f6rjat bli rynkiga.<\/strong><\/p>\n<p>Jag l\u00e5ter allt koka l\u00e4nge och fridfullt och sedan \u00e4r det bara att mixa. Stavmixern en minut eller tv\u00e5 tills allt blir lent och fint och s\u00e5 h\u00e4ller jag i lite gr\u00e4dde eller cr\u00e8me fraiche p\u00e5 slutet om jag k\u00e4nner f\u00f6r det. Vipps har jag en hel kastrull galet god gr\u00f6nsakssoppa gjord av det som annars kunde ha blivit bortsl\u00e4ngt av bara farten. Den smakar aldrig helt lika fr\u00e5n vecka till vecka men blir alltid god. Jag har ocks\u00e5 uppt\u00e4ckt att det \u00e4r v\u00e4ldigt gott att l\u00e4gga krispig sallad p\u00e5 soppan, det hade jag inte testat f\u00f6rr\u00e4n nyligen.<\/p>\n<p><strong>Dagens matsvinnstips fr\u00e5n mig \u00e4r allts\u00e5: <\/strong>Mixad gr\u00f6nsakssoppa p\u00e5 allt som blir \u00f6ver fr\u00e5n gr\u00f6nsakshackning eller kylrensning.
